I would like to find out if there is a way to create a quiz from other quizzes that have already taken place on the course this semester.
I think I can take the existing course quizzes and make them Quiz Banks, if so -- then getting questions in a new quiz should be fine, right?

All questions you use throughout the semester are placed into an Unfiled Questions bank by default. You can see your banks on the Quizzes page by clicking the top-level three-dot menu. You can create new banks and file questions by topic, standard, type, etc.
When you're building a quiz, you can either use Find Questions and pull from a bank or use Question Groups and link each group to pull n-number of questions from a bank. If you want to keep it simple, you can pull all questions, at random, from your unfiled bank without any sorting to give every student a different test on each attempt.
