When creating a quiz or exam, is it possible to do that for multiple sections (say 3 PSYCH 1a courses) simultaneously?

If the sections are each in their own Canvas course, no there isn't.  But, it's very simple to copy the quiz into the other courses after you've created it.  The main way to do this is by using the course import tool How do I copy content from another Canvas course using the Course Import tool? 

A new feature that also works well but may or may not be turned on at your school yet is Direct Share How do I use Direct Share to copy a quiz to another course?.
