I have two questions:

1.  Is there an easier way to create a quiz than question by question?  I tried to upload the test bank but it says it is incompatible.

2.  The quiz that I did create, once they took it there are nothing but zeros in the gradebook.  What did I do wrong and how do I change it to reflect their grade?

I can answer your first question.  Yes, there is a paid product called the Respondus Exam Authoring Tool that lets you upload many questions all at one time into Canvas.  I've written an extensive blog on the topic, and you can find it here: Batch Uploading Quiz Questions with Respondus.
