I'm not entirely sure if that would be possible in the FFT account or not...at least not from your end. My hunch would be "no" on that, however...only because restoring courses is typically something that can be done in a paid Canvas environment that has an administrative back-end interface. Canvas FFT does not have this available...as I understand it. A school's local Canvas administrator would typically use the following Guide to restore a course in the account: How do I restore a deleted course in an account? - Canvas Community.
I searched the FFT space here in the Community, and I found this document for you: Free-for-Teacher Account FAQ - Canvas Community. It looks like you would be able to contact Canvas Support, and they would be able to help you restore the course(s) in question. You might give that a try.
