I teach art at the high school level. I prefer to organize modules by unit. That way, if a student remembers a particular topic or theme, they have a starting point for searches. As the semester goes on, it also keeps the home page tidy as it's likely there are fewer units than there are weeks. I've seen courses built with weekly buttons, and it seems busy, especially when viewed on a smartphone or tablet.
Within the module you could use the text headers to separate by week, if units fall neatly into a Monday-Friday format. Otherwise, you could list the different categories of assignments or activities using the text headers and then list the items chronologically beneath it.
I think another perk of units is the ease of copying content to a new term. ...and adjusting things as a current term changes with format -- f2f, blended, or online.
