How do I set up a calendar with time slots for my students to book 1:1 telephone slots with me

Welcome! That is something we can definitely help you out with. Provided your institution has enabled it you can use the Scheduler to let your students book in time slots with you. There is a great guide available at https://community.canvaslms.com/docs/DOC-12920-4152716604 which should give you all the info you need.
