I have to transfer my students' Canvas grades to my school's grading software. I do this once a week, so I need a way to sort assignments to only see what has come in in the past week. I know I can sort in SpeedGrader but that doesn't accomplish what I need.

You can sort the gradebook by Due date. Does that work? If you are using Due dates you should be able to sort pretty easily and look at just assignments due in the last week. Late assignments will have a different color background so you can also look back and easily pick them out as well.

Our school recently migrated from Blackboard to Canvas, and we are finding the "Speed Grader" to be more like a downgrade in speed from a Tesla Plaid to a 1982 VW Rabbit.
Here is our minimal requirement to not feel this way (please note that we are continuous enrolment, meaning that we cannot use 'due dates' in the way that other schools may be able to).
1. We need to be able to Sort by student and grade all of a single student's assignments - in case they have completed the course and need a final grade for a deadline (or other reasons). This should be done in a way where when one assignment grade is 'submitted' it automatically takes the grader to the next submitted assignment.
2. The ability to sort by date - as a list and grade in reverse order so that we don't miss any students work that was submitted a while ago - it is important to catch these, and impossible to see in the grid-style gradebook. Again, to save time, it is critical that when we submit the grade for one assignment it has the option of going to the next assignment rather than complex clicking cycles around the gradebook.
3. The ability to sort by type of assignment (like discussions, tests, etc.) and once again, grade and be able to navigate to the next one rather than navigate around the grid-style gradebook.
