Hi, 

need some help to understand if I am able to track the student if he/she is watching the video that I've embedded using HTML embed code, i.e. Youtube video?

Do you know if your school has purchased Canvas Studio from Instructure?  (You'd see a "Studio" icon on the left-hand side global navigation menu within Canvas.)  Studio allows you to gain "Insights" about the videos you embed in your course.  You can tell who has watched a video (either one created on your own or one from YouTube).  And, you can tell which parts of the video a student watched or skipped over.  More information can be found here: How do I view user insights and analytics for medi... - Canvas Community.

I have also heard that Kaltura (a third-party product) also has this capability?  But I've never used it before, so I'm not 100% sure on this.

My school is using Knowmia by TechSmith which gives this functionality. 

I know of no way to track students watching YouTube videos.
