How do I view previous classes taught?

Good evening,  @sheligb  Welcome to the Canvas Community.  Thank you for posting your question.  Assuming that your school has not removed/dropped you from your past courses, you should be able to see them listed in your "All Courses" screen within Canvas.  Please check out https://community.canvaslms.com/docs/DOC-12972-4152719649 for more information.

Do you mean courses that are over - Past Enrollments? I'm pretty new to Canvas, but I had success clicking on my "Courses" button on the grey left navigation bar then "All Courses."
