Hello there, @benjamin_pozon ...

By "conference", do you mean the "Conferences" button within your course which uses the BigBlueButton interface?  If so, I'm not sure if you are using the free or paid version of BBB, but the free version only stores recordings for 7 days.  After that, recordings are deleted.  This is confirmed in: How do I record a conference?.  I'll also tag @ffdixon in my reply in case he has any other comments for you about how BBB works.
