Most likely, your "Assignments" course navigation menu is hidden from students. This can be enabled via your course "Settings" screen. Check out this Guide: How do I manage Course Navigation links?. Once enabled, and assuming that you have at least one assignment "published" with the green check-mark next to it, then you won't see that eye icon any more.
