Why does the statuses color of a grade continue to show as missing when a grade is actually been entered?

Statuses are not automatically changed in the Gradebook. If you want to change the status for a submission, you can do that manually as shown in this lesson: https://community.canvaslms.com/docs/DOC-26462-how-do-i-change-the-status-of-a-submission-in-the-gra...

I have to admit the status functionality is a little tough to work with. Wouldn't it be obvious that when a student finally turns in an assignment that the status should change too late instead of just missing. This really is very confusing.
