You didn't say you whether you were using Classic Quizzes or New Quizzes. What I write applies to both except for a few cases that are specific to Classic Quizzes.
The due date is not a factor in whether it shows up in the gradebook (unless perhaps you're using grading periods).
The "do not count towards final grade" is not available in Classic Quizzes.
Even if an assignment has the "do not count towards final grade" is selected, the item still shows in the gradebook.
Things do not show in the gradebook if they are not published, but you've already checked that the quiz is published and SpeedGrader shows that there are grades there. You cannot unpublish something once there are submissions for it.
Non-graded items do not appear in the gradebook. For Classic Quizzes, that would be a practice quiz or an ungraded survey. However, neither of those have a link to SpeedGrader, so since they're showing up in SpeedGrader, it's not one of those.
Now that we've played calculatus eliminatus, let's look at something that might be the reason. Two of the things I can think of have to do with filtering.
If you use grading periods (we don't, it's mostly a K12 thing in the U.S., I think), you can filter by grading period. How do I use grading periods in a course?
In the Gradebook, you can apply filters by Assignment Groups, Modules, Sections, or Student Groups. It is possible that the quiz in question has a different classification than the others and so it's not visible in your Gradebook. How do I filter columns and rows in the Gradebook?
Another possibility is that it is in the Gradebook but not where you would expect it to be. This one often affects me. I will go looking for an assignment based on the location that it is in on my assignments page and it's not there. The "Default Order" is supposed to be this, but for me, it is sometimes not. There is no ability to search for the assignment name and you have to scroll back and forth to try and find it.
