So, I am a Teaching Assistant for a course and, in instructor view, see this when clicking on the zoom section.
I tried to permanently change my email to my work email though canvas kept changing my default back to my personal email. Any tips?

If your school has opted to purchase paid Zoom licenses to distribute to instructors, then I believe the e-mail address that was used for the Zoom account needs to match the e-mail address tied to your Canvas account. This is also assuming that your school has also set up the Zoom/Canvas LTI external app integration. You may need to have a conversation with your school's local Canvas administrator or someone from your school's Online Learning/eLearning department to figure out how you can get Zoom working within your course.
