What's the best way to add student-generated video (probably shot on their phones) onto my course Canvas site?

If you're doing it as an assignment, we always have staff use the Media Recording option in the Assignment settings. This submits the video as an embedded media piece in the SpeedGrader. If you do a File Upload submission, you will need to download each file to view it.
You can also have students store their video online somewhere (Youtube, Google Drive, Box, Flickr, etc) and have them submit via a URL. The SpeedGrader will try to grab an embedded view of the item if it can. Otherwise, you will need to click the link in the SpeedGrader to open the video.
