I'm not sure if you're a student or a teacher. If you're a teacher, you can add an image to the course tile on the dashboard by going into the course settings and then choosing an image file. See this page for details:

The image that the teacher uploads here will be seen by all students who have this course on their dashboard. If you are a student on the course you're not able to add your own image to the course tile, you will only see the image that the teacher has set.
