How do students up load more than one word document to an assignment using the app on their ipads?

Hi Monique -

If you save the file to the Files app on your device, you can select multiple files to include in a single submission.

This lesson will walk you through the steps on how to submit using File Upload.

How do I upload a file as an assignment submission in the Student app using my iOS device? 

After including a file in the "selected" list, tap the Files+ button again to add another file. When you have everything you need, then tap Submit.
