if I want to make two versions of the same quiz, one GenEd and one read aloud, how would I do that? Will they appear as the same quiz entry? What if I wanted a GenEd version, an extended version, and a SpEd read-aloud version?
I am really liking Canvas so far. I am taking the course designed for each school but this has some additions that are very worthwhile. Glad I'm in both.

I'm guessing that you have written text that students need to read but some students have an accommodation for an audio version. If this is the case, you could either create an exam that give students both options and they can choose which works best for them, or your students with the accommodation may have a screenreader tool they use which allows the single written source to work for them?
Once you have the assessment designed, there are ways to moderate for time accomdations
