I can see student actions, which is participation, but this could simply be the student moving back and forth through the quiz, I imagine.
Is there analytic data that would indicate that a student used another device, for exp, their phone, to look up things in the modules while quizzing?

Canvas can only watch what's happening on the signed-in device in the app or on the website. So, if they pick up another device, there isn't anything Instructure itself can track. You can, however, infer what's happening by looking at the timestamps. We encourage our teachers to ask first rather than assume something was happening.
