Does anyone have a clever suggestion for an assignment that is posted in one module, but "due" in another module? In other words, it spans multiple modules with the submission link visible in a later module.

One suggestion, not sure how clever, is to create a non-graded assignment for the first module. It will show up on the calendar and To Do list to remind students about it, but they can't turn anything in and it doesn't take up real-estate in the gradebook.
Use a real assignment that is graded and has a submission type for the second module.

Interesting conundrum. You could in theory create a page with the assignment details (which you then replicate into the assignment itself). In the earlier module, post the page as a content item (but specifically name it Assignment X Details), then have the actual assignment submission itself appear in a later module.
Although, this would only work in a subset of cases, what sort of assignment is it (and what sort of submission type).
Look forward to hearing a little more so we can come up with something creative for you.
