Can students begin a quiz, save their progress and finish it at a later time? I am setting up my online course using the quiz feature more as an exploration, and not a traditional quiz. It will take them longer than one sitting to complete the entire exploration, so I need them to be able to save their progress and continue at a later time. Is this possible?

Hey, @kelkessi ! Canvas saves quiz responses automatically, and students can exit and resume a quiz as long as they still have time left on the attempt. You could accomplish your goal by uncheck it the time limit option or placing a long time limit on the quiz.
However, here is no way to prevent the student from accessing the quiz between class sessions, so if that is a concern, you might need to consider another solution.

I saw your post from 2017. Is there no way to save progress, prevent them from seeing quiz until the next time they are in class? I can't believe this hasn't been addressed.
Would changing the qui access code prevent the student from accessing the quiz between class sessions?
@kelkessi , @dhulsey has given you great advice. As long as there is no (or a super long) time limit set on the quiz, students can go in and out of it as many times as necessary--as long as they don't click the Submit Quiz button. Once they do that, they cannot resume the quiz attempt; it is over. You'll want to make sure to give your students explicit instructions about this.

We just give a quiz where we underestimated the amount of time students would need. One of the problems we are having is that previous answers can't be brought forward into new attempts and once time runs out the quiz is submitted automatically. We would like to give them more time but can't find a good solution. If anyone reading this has any suggestion it would be greatly appreciated.
Time can be extended while the students are taking the quiz, from the Moderate Quiz view:
This needs to be done for each student, though alternatively, I think if you get to it on time, you can increase the time limit by editing the quiz and it will take effect for everyone at once.
