I would suggest that you follow this conversation: Dark Theme for Canvas - Canvas Community.  I do not know of a timeline if or when Instructure may implement something like this in Canvas, but as you can see from this topic, there's some interest in it from Community members.  If you have not done so yet, you might want to give that Feature Idea a star rating and then also post a comment to the thread letting Instructure engineers know why a Dark Mode would be important to you.  The more use cases that they can gather, the more informed decisions can be made.

Considering it's been asked for since 2018, and it still hasn't been implemented when it's a simple html flag. Probably not.

If you are using chromium browser like Brave, Chrome, etc. Then you can go to chrome://flags or brave://flags and search "dark" and one of the experimental flags will show up, just enable that. Mind you, this will break a few other sites and you wont be able to properly see some elements since it's too dark. But it works.
