why is the total grade not visible in the grade book?

Do you happen to have it hidden from the Settings > More Options > Hide totals in student grades summary?

which settings? I hid 4 assignments from the students and after that the total was hidden

As you can see, the total grade doesn't show up at all for this class that I have set up as a test. The course is published and the "students" are other admins that I have included as students for the course.
