How do I disable "not visible" for announcements and assignments or is this a premium feature?

Hello  @vroomwithmissba  Welcome to the Canvas Community.  Thanks for posting your question.  No, this isn't a "premium" feature.  It just sounds like you need to do a little bit of configuration with your course navigation buttons to "unhide" them from your students.  Please check out this Guide for additional information: How do I manage Course Navigation links?
