How do I download ONLY what is published on my course in an epub?

While downloading our epubs, we are noticing that the entire course downloads at one time. To save storage space on devices AND prevent students from accessing future content, we would like to only generate an epub for published content on a course. How do we do this?

I apologize that your question hasn't yet received a response. According to the documentation, an ePub export should only include published content, and includes published content in an unpublished module. If you're experiencing something contrary to that, please ask Canvas Support to look into it on your behalf.
