Welcome to the Canvas Community! I may be 100% incorrect on this, but I suggest you take a look at some of the answers offered here, even though the topic is from a completely different area of Canvas: Tips for quiz result export? It may very well come down to some settings that the professor may have in his/her Excel software. (I'm assuming they are using Excel for opening the CSV file.)
Hopefully some of the suggestions offered in there may help. (I hope so! Because I haven't encountered behavior like this myself yet. Each time I've had to do a download from the New Gradebook things have looked okay.)
