Hello  @gillespiek  Welcome to the Canvas Community.  Thank you for posting your question.  Could you help identify which Rich Content Editor (RCE) you see displayed on your screen?  This will help Community members in helping you locate what you're looking for...as there are some differences between the two RCEs.

In addition to what Chris wrote, here are some lessons from the Canvas Instructor Guide that show how to include a YouTube video. The New Rich Content Editor is a moving target, so a video made in January may be out of date.

• How do I link to a YouTube video in the Rich Content Editor as an instructor?  
• How do I link to a YouTube video in the New Rich Content Editor as an instructor?  

If your V has disappeared, my first guess would be that you're using the New Rich Content Editor.
