Student Equation Editor for Math Quizzes

Is there a way to create a Canvas Quiz where students can type their "fill-in-the-blank" answer in using the Equation Editor? I know that they can use the Equation Editor for an "Essay Question," but then there is no way to input a correct answer from the teacher's side.

No. Fill in the blank questions do not support the equation editor, they are text-only.

They do support Unicode and UTF8 encoding, so people can use special symbols like √ but then it becomes of problem of entering characters that are not on the keyboard.

Fill in the blank questions are problematic as well when it comes to math. It does not understand math, only text. (x+3)(x-2) is different than (x-2)(x+3), (x+3)*(x-2), ( x+3 )( x-2 ). x^(1/2) is not the same as x^0.5, x^.5, or √x. You would need to put in all of those answers that students might enter. 

Math teachers are really good at grading correct responses when written in math notation (essay questions). Computers are not. It takes specialized software (a non-exclusive list includes MyOpenMath, WebWork, WebAssign, MyMathLab, ...) to do that.
