In one of my classes, I apparently and somehow unknowingly created Assignment Groups. Now I don't want groups, just the assignments that are within the groups. The problem is the Groups have created an extended grade book where the Assignment titles (Week 1, Week 2, etc.) are listed in columns after the weekly assignments with graded content, and they indicate something "missing" to students. Is there any way I can get out of these groups, delete the empty Assignment labels, and shorten my grade book?

If I am understanding your question correctly, it sounds like you've got multiple Assignment Groups in your "Assignments" index page of your course. And, you've got multiple assignments in each of these Assignment Groups. So, it could look something like this:
But, it sounds like you'd like to have all assignments be listed under one Assignment Group and then get rid of the Assignment Groups that do not have any assignments in them any more.
By default, you must have at least one Assignment Group. So, you can either:
This should remove those extra columns at the end of your Gradebook.
