I am using a work around, but you may not like it.
Every student in my class has their Class Notes section, but I added an Assessments section, too. You could use the Homework one.
First, I create the task in Onenote. Ensuring the page is sensibly named making the task identifiable.
Second, distribute to their page to the students' section, in my case Assessments.
I set the work in Canvas and use the On Paper setting. In the description, I instruct student to complete the work in their Onenote Assessmnet section.
At the due date, I use Class Notebook's Review Student Work feature.
Select the task's page and tick Lock Page.
In Canvas, I open the Speed Grader. Using Class Notebook's Review Student Work feature, I navigate and grade the student work. I can add feedback to the Onenote page, but I like to place formal comments in Canvas as I go.
Students can not edit their work when the page is locked, but it does mean it is not stored in Canvas, only the grades and comments.
This is not how I was lead to believe it would work when I did my school's PD on Canvas, but no one can tell me how to do what it appears we all want to do.
I know this is not the solution, but it is how I am managing atm.
