I am in the process of creating a Professional Development session for the teachers in my district on AI, it's uses in the classroom, using in conjunction with Canvas to elevate their Canvas usage and would be interested in any suggestions, resources you might we willing to share.
I also have this question. I'm creating some PD and though it won't focus exclusively on AI, that will be an important aspect of some of the modules. I gave a talk at InstructureCon on my general thoughts toward AI in education, and I re-recorded it on YouTube:

I'm also starting a brown bag series next month where anyone from our institutions with an interest in AI and education can come together to chat. Right now I'm keeping it as a fairly informal monthly meeting, but I could see in the future this branching off as administrators and leadership look at refining policies, teachers look for resources with their class, course developers look to streamline their workflow, etc. It should be fun.

My team has also built a cool extension for our Canvas Insights tool that leverages AI to help with data literacy and get teachers started with AI and data dashboards (attached).

This is a great question. We have just released a self-paced, Professional Development course for our college on AI in the Classroom. If any of this information makes sense, please feel free to use it. Also, if you have any questions, please let me know.
The basic premise for the course is that AI is all around us and faculty need to see how it is used both good and bad, before they make the determination how they will use it in their course. We have used AI throughout the course, specifically noting it, to show how it works. The opening video, for instance is generated using AI.

This digs into the feeling of the student regarding AI, from the beginning and then asks them to participate in discussions regarding what happens as they do different things using AI. This can be the results of uploading their own writing to an AI Checker, offering various prompts to AI Generator, taking a quiz that uses AI to determine a suspicion rating regarding cheating, and anything else that we could come up with having them use the technology.
This looks like a good outline. Faculty might be trepidatious about AI, and even students might be wary, but it's still a great initiative. I think that largely students will be using AI in their jobs after graduation and it's a great skillset for us to teach out students to prepare them for their post-graduate endeavors.

A colleague launched an 'AI in Academic Practice' course for internal use in September and one aspect I really appreciated was that the course introduced and went into depth about the pros/cons of the 'big 4' GPTs.

I'm doing the same at the college level. A big challenge was that the buzz around AI doesn't distinguish clearly between what we can do, what we should do, and what we'll someday be able to do.
