Welcome to the Canvas Community. Thank you for posting your question. Per the Canvas Release Notes (2019-11-16), the Microsoft Immersive Reader feature is being offered on a trial basis. Also, it is only available in Canvas course "Pages". It is not available for other areas of your course for things like "Assignments", "Discussions", or "Quizzes".
