I need to set up a Canvas course shell for an adjunct instructor by 5/26/20, which she will later complete.

You have posted your question in the Canvas Community public forum.  This forum is designed to answer questions regarding how to use the Canvas Learning Management System.   As such, we do not have access to your courses or course content. I just checked the University of Wisconsin-Whitewater website and you might go here Canvas for Canvas support from them.
