How do get two separate sandboxes to prepare learning materials for two different courses that I will be teaching ?

The simple answer to your question is to just request a second sandbox course from someone at your school such as your school's local Canvas administrator or someone from your school's Online Learning/eLearning department.  They should be able to get you set up.
