when creating a meeting in calendar I do not have the assignment tab or appointment tab

Hi patrickpam Welcome to the Canvas Community.

I'm guessing that you are trying to create a Teams meeting via the Canvas Calendar.

It just so happens that I learned how to do that TODAY!

When you make the meeting via the calendar that is the only place it will be found by your students. However you can also make a teams Meeting within your course on a page, discussion or announcement - anywhere with the Rich Content Editor.
