I am a Kindergarten teacher new to Canvas. I need to know how to start an assignment.

A good starting point for you would be to watch this short video tutorial: Assignments Overview (Instructors).  These next to videos are what students would see on their end: Assignments Overview (Students) and Assignment Submissions (Students).  If you ever want to take a deeper dive to learn more about Assignments, there are a lot of written Guides available for you.
