Great question. Unfortunately you won't be able to "un-submit" the quiz. Submitting the quiz locks it from being re-opened; that attempt is complete. Instead you can give the student an additional attempt through moderation.
- Access the quiz
- Click on "Moderate the quiz" on the right side
- Find the student, click on the pencil/edit to the right of the student's name
- Identify the the number of attempts you want to add for the student; then click on save.
