You should not need to reassign an assignment to a student. If you let them know they need to resubmit their assignment they should see an option to do that.

The resubmit option is readily available to them?

I remember once I did it for an actual assessment but this is for an assignment (not a quiz) that the student did poorly on and is asking to redo it.

 @gubanicht ‌, students can submit and resubmit to an assignment as many times as they wish until the Available Until date has passed, so as long as that date is still in the future, ask the student to upload their new submission to the same assignment. If that date has passed and you wish to extend the due date for just that one student, you can add a set of due dates (making sure to retain Everyone) this way: How do I assign an assignment to an individual student?
