We here in the Canvas Community wouldn't have access to your school's Canvas environment or the course(s) you are taking at your school in order to help troubleshoot your question specifically. Your best option it to reach out to your school's local Canvas administrator or your school's Online Learning (or a similar name) department, as they should be able to help you figure out why you are not seeing your course(s) on your "All Courses" screen. There are some possible explanations of why you might not be seeing your course(s) in the Guide Why can't I access my Course as a student?.
