Expected Behavior when enabling C4E at the sub-account level

So I went into our beta environment to start testing our course uploads for the new school year. I enabled the elementary theme on our elementary sub-account and uploaded some courses/enrollments. When I logged in as a teacher in the beta environment, I could see the new courses but it didn't shift to the new interface even though it is enabled. Am I missing something? I've been off contract for a while so this my first week back and I feel like I just forgot how everything works!

Amateur hour over here. I enabled elementary theme in Feature Options instead of Canvas for Elementary Setting.
