Customize Roster and Gradebook to use Display Name

We would like to customize the People page so the roster lists the students' Display Name, not their Full or Sortable name. Ideally we could do this in the Gradebook as well. 

Does anyone know how we might use Javascript (or another method) to accomplish this?

We have a Preferred Name process at the school that accomplishes this for students, but it would be good to allow them to expedite it on their own in Canvas.
