I have one student which I am allowing to retake a quiz. Do I need to reassign the quiz to that student? What does it do with the previous grade? Is there another way way to open the test back up for that 1 student?

 @lhenson ​, here's the easiest way to do this - Once I publish my Quiz, how can I give my students extra attempts? - my recommendation is to do it through Moderate Quiz and make sure to check the box to "manually unlock quiz for next attempt."

As for the grade, the last attempt should be the one that shows up in the gradebook.
