overriding a 0 in skyward

If I grade an assignment as 0 and missing, then when I finally grade the assignment does Canvas override the 0 grade? I just spent over an hour going through each class and putting 0 and missing for each assignment. Then I posted the grades in Canvas. Then I looked again, and nothing overrode the zeros to my knowledge. So then I had to go and take out all the zeros (plenty of them) and then re sync the grade from the gradebook in Canvas. Is there an easier way to do this other than not accepting anything that is past the due date? I could go in manually and put in missing, and eliminate the 0's thus giving the sync a chance. Is that the solution or is there a better one? I believe you should have an option to put in missing assignments as one shot deal and no zeros. OR I would like to be assured that by syncing the grade will be overriden from a 0 to a 20 for example, or even from an 11 to a 14, if that is the case.
