The only way I have found to get Campus Nexus & Canvas to talk is through custom coding utilizing API's on both sides as well as SQL scripts if you're an on prem customer of Campus Nexus.

Email is the Canvas default. Canvas does allow for Canvas Admins to change the verbiage. Here is the link to how this is done.

As long as the student(s) have gone in and setup their phone number as a contact method within Canvas (https://community.canvaslms.com/t5/Student-Guide/How-do-I-add-a-text-SMS-contact-method-in-Canvas-as-a-student/ta-p/411) and setup to allow Canvas to send those types of notifications to their cell phone (https://community.canvaslms.com/t5/Student-Guide/How-do-I-manage-my-Canvas-notification-settings-as-a-student/ta-p/434) then they should start getting these types of notifications via text.

The term verbiage is based on what term the course is enrolled into in Canvas and is not something that is editable within the settings of the course. We find it useful to have the term listed there because it helps ensure we are looking at the right course when we have to look into issues or when setting up courses for the upcoming term. Is there a reason why you wish to hide the terms title?

I can't tell you why the document states it's only kept for 365. I can confirm that I was able to view a students page view from back in 2018 via the web interface and what you can see and is returned in the web interface is what gets returned via the API as well.

I can't say for sure, but I think page views are kept in perpetuity. As when I went and reviewed my account within Canvas I am able to go back to 2017 when we first began using Canvas and I am able to see all my pages views.

If you just completed the students enroll and not actually deleted the student from the course you should be able to go to the people screen click on the 3 dots on the left hand side of the screen and view prior enrollments. From there can click on the students name and then Students grades to be able to see all the grades the student received in the class.
Alternatively you can go into the gradebook and go to individual gradebook, click on include prior enrollments and then export the students grades from there.
If you actually deleted their enrollment you will need to re-enroll the student into the course get their grades and then delete them again.

When you copy something from one course to another it keeps the state (published/unpublished) from the courses it's copied from. What you can do is once it is copied into your new course is to immediately unpublish the assignment, quiz or page make the necessary adjustments and then publish it again.

Your hypothesis is spot on. You can't simply copy and paste items as the link will still be pointed to the old course many times instead of the new course. The easiest way to make sure this doesn't happen is to import content from the old course to the new course. This ensures links are pointed to the current course.

If an announcement is copied from one course to another the picture becomes a U and is because it was not posted by a specific person. If you wish to have the instructor's name and image next to an announcement they would need to manually enter the announcement instead of having is imported.

It does appear to be selected in yours, but I am not seeing that as an issue in our instance of Canvas. It does appear that you have some custom JavaScript running. Was there any updates made to that recently that could have caused this?

Each institution has it's own integration into Canvas and depending on how that integration is setup will depend on how frequently students are enrolled and dropped for a course. I would recommend reaching out to your local Canvas Administrator or putting in a help desk with your local institution to inquire about this.

The only time I've seen this is because the SIS ID was already in use in Canvas. Whether it be a course you can see or maybe a course that was previously created and then deleted. Once a SIS ID is taken it can't be used again.

Have you looked at the Student Submission report? This report would allow you to get submission dates for each item in a course, the graded date, score, etc. by course and term and would not require you to call an API for each course.
