Please make a feature where you can choose to only show the final score for a marking period without showing all assignment grades. Alternately make a feature that allows for showing selective material and averages at the end.

Please consider creating a button to remove observers more easily from students. Currently you have to remove yourself from each course individually. I think you need to make a feature so that when an observer goes to their settings and views the list of students they are observing they should have an option to remove the student from the observer list.
This idea has been developed and deployed to Canvas
