I checked and made sure notifications were enabled for each individual course, as well as global. They were. Seemd to be an issue on Canvas/Instructure's side!

I have the Canvas mobile app and use the web version on my laptop, as well. I've checked that notifications are enabled for Canvas on my iPhone. I also receive mobile notifications from the Canvas...
