I had a similar problem, except this is for a make-up that the student was doing after the semester was over. In this case, I solved it by going to the Settings and changing the End date of the course.

I've been writing make-up exams for several specific students recently, and I get this pop-up every time I change something in the quiz.

Yes, 5 minutes and 1 minute are the times for the warning message. (Students also get one at 60 minutes.)Making these adjustable, or not having a warning at all, should be an option as well.
