Thank you, Doug! That was exactly what I was looking for, but then I put it here, because I was stumbling around too much 😁
When working in Pages, when I select the type of html editor to use (Pretty vs. Raw), my choice is remembered on any other page I work in. So, for instance, Pretty html is the Canvas "default"...
