Faculty at my university are also bothered by this behavior too. Specifically for Complete/Incomplete assignments. When a Student resubmits, the Teacher isn't able to quickly mark as Complete again from Gradebook, they have to dig into SpeedGrader. I'm split on this - I recognize that if a Student resubmits, it's probably for A Reason and the Teacher should Review It, but it is a bit bothersome to have to dig into SpeedGrader to mark the same item as Complete again.

I second @LMacaulay, I'd like to see "by section". We enroll students into cohorts using sections, I'd get more use out of the tool with this added.

I'm sorry to report that this does seem to be the case. I typed a phrase into Google Translate and copied it into a Canvas Quiz answer, and the formatting looks exactly the same. When I look at the Quiz Log, I see the formatting as well:
