Welcome to the Canvas Community!
There are a couple of ways of doing this and some require more permissions than others. If you just want to remove the course from your Dashboard and Courses tab, you can deselect the star for that specific course.
How do I customize my Courses list as an instructor?
If you want to move your courses to a Past Enrollment status and you have the correct permissions you can change the end dates for the course and section.
